Japchae Noodles
Japchae, sweet potato starch noodles stir fried with vegetables, is one of Korea’s most loved dishes. This is my first experience with sweet potato starch noodles and it won’t be my last. The texture of this noodle is different from any others I’ve tried. The veggies and noodles are prepped and stir fried separately which seems like a lot of work but it protects the integrity of each ingredient keeping the color and texture intact. Ingredients
- Sauce:
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- ½ teaspoon black pepper
- 1/3 cup Red’z Bulgogi BBQ Sauce Original
- 1 tablespoon sugar
- Ingredients:
- Oil
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- ½ red onion sliced thin
- Red bell pepper sliced thin
- Carrots matchstick
- Baby broccoli or broccolini
- Mushrooms I use the rehydrated black fungus
- Scallions greens only sliced for garnish
- Sesame seeds toasted for garnish
- Sweet potato starch noodles – sometimes Walmart carries them I had to get mine from Amazon
Instructions
- Mix sauce ingredients with a whisk, set aside.
- Make sweet potato starch noodles according to package directions and rinse, set aside. Sometimes with traditional noodles rinsing is discouraged so the sauce sticks more easily but I wasn’t sure how starchy these would be, rinsing worked just fine.
- Place matchstick carrots in bowl, cover with boiling water and seal with plastic wrap.
- Place broccolini in bowl, cover with boiling water and seal with plastic wrap.
- In large skillet or wok add some vegetable oil and heat. Add onion and cook for a minute or two.
- Add ginger and garlic to wok along with red pepper strips and continue to cook for a couple of minutes continuing to stir and move ingredients as not to burn the garlic.
- After draining water add carrots and broccolini along with mushrooms, cook until tender without overcooking broccolini, about 4-5 minutes.
- Add cooked noodles to wok along with sauce and stir fry until heated through.
- Now you’re ready to serve, finish with scallions and sesame seeds.
